Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Peel, core, and dice the apples into small chunks. Set aside.
  3. In a small bowl, combine ½ cup brown sugar, ¼ cup flour, 1 teaspoon cinnamon, and ¼ cup softened butter. Use a fork to mix until crumbly. Set aside.
  4. In a medium bowl, whisk together 2 ½ cups flour, 1 ½ teaspoons baking powder, ½ teaspoon baking soda, 1 teaspoon cinnamon, and ½ teaspoon salt.
  5. In a large bowl, beat ½ cup softened butter and 1 cup sugar until light and fluffy, about 2 minutes.
  6. Beat in 2 eggs one at a time, then add 1 teaspoon vanilla extract and 1 cup sour cream. Mix until smooth.
  7. Slowly fold the dry mixture into the wet mixture using a spatula until just combined. Avoid overmixing.
  8. Gently fold the diced apples into the batter.
