  • 4 boneless, skinless chicken breasts or thighs
  • 1/2 cup Irish whiskey
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon brown sugar
  • 2 sprigs fresh thyme or 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pat the chicken dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 4 minutes per side, until golden brown. Remove and set aside.
  3. Reduce the heat to medium, add the butter, and sauté the garlic and onion until fragrant and translucent, about 2-3 minutes.
  4. Carefully pour in the Irish whiskey, scraping the bottom of the skillet to incorporate any flavorful bits. Let it simmer for 2 minutes to reduce slightly.
  5. Stir in the chicken broth and brown sugar, then return the chicken to the skillet. Simmer for 10 minutes, turning the chicken occasionally.
  6. Stir in the heavy cream and thyme, cooking for another 5 minutes until the sauce thickens and coats the chicken.
  7. Sprinkle fresh parsley on top and serve hot with your favorite sides.

Notes

For a smoother sauce, simmer gently and adjust seasoning to taste. Substitute whiskey with apple cider for a non-alcoholic version.
