  • 1 fully cooked, bone-in ham (about 810 lbs), spiral cut preferred
  • Whole cloves (optional)
  • 1 cup honey
  • 1/2 cup brown sugar (light or dark)
  • 1/4 cup Dijon mustard
  • 1/2 cup pineapple juice (reserved from canned pineapple)
  • 2 tbsp apple cider vinegar
  • 1/2 tsp ground cinnamon
  • 1 can (20 oz) pineapple rings in juice, drained (juice reserved)
  • Maraschino cherries (optional)
  • Toothpicks (for securing pineapple and cherries)

Instructions

  1. Preheat oven to 325°F (165°C). Position rack in lower third.
  2. Remove packaging and netting from ham. Trim rind, leaving a thin layer of fat. Score fat in a diamond pattern about 1/4 inch deep.
  3. If desired, stud intersections of scored diamonds with whole cloves.
  4. Place ham cut-side down on a roasting rack in a large roasting pan. Arrange pineapple rings over top and sides, securing with toothpicks. Place a maraschino cherry in the center of each ring if desired.
  5. In a small saucepan, combine honey, brown sugar, Dijon mustard, pineapple juice, apple cider vinegar, and cinnamon. Simmer over medium heat, stirring until dissolved and glossy (about 3-4 minutes).
  6. Brush about half the glaze over the ham and pineapple.
  7. Cover loosely with foil and bake for 1 1/2 to 2 hours, basting every 30 minutes. Ham should reach an internal temperature of 140°F.
  8. Remove foil, increase oven to 400°F (205°C). Brush on remaining glaze and bake uncovered for 15-20 minutes until glaze is sticky and caramelized. Tent with foil if glaze darkens too quickly.
  9. Remove ham from oven and let rest for 15-20 minutes before slicing.
  10. Remove toothpicks and cloves before serving.
  11. Slice and serve, spooning extra pan juices over the top.

Notes

Layer the glaze throughout baking for a sticky, caramelized crust. Cover with foil to keep ham moist and baste every 30 minutes. If using spiral cut ham, score gently to avoid slices falling apart. For gluten-free, double-check mustard and vinegar labels. Prep glaze ahead for convenience. Add water or pineapple juice to pan to prevent drying out.
