  • 1/4 cup honey
  • 6 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon apple cider vinegar

  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder (optional)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Remove the giblets and pat the chicken dry with paper towels. For crispier skin, let it sit uncovered in the fridge for 1 hour.
  2. Truss the chicken by tying the legs together with kitchen twine and tucking the wings under the body.
  3. In a mixing bowl, whisk together honey, minced garlic, soy sauce, melted butter, apple cider vinegar, dried thyme, salt, black pepper, and onion powder until smooth.
  4. Place the chicken on a rotisserie spit or on a rack in a roasting pan, breast side up. Brush generously with half of the glaze, making sure to coat all surfaces. Reserve the remaining glaze.
  5. Cook using your preferred method:
    – Rotisserie Oven: Roast at 375°F for 70–90 minutes, basting once halfway through with remaining glaze, until skin is deep golden and juices run clear.
    – Conventional Oven: Roast at 375°F for 70–90 minutes, basting once or twice with reserved glaze. Tent loosely with foil if glaze darkens too quickly.
  6. Check for doneness by inserting a meat thermometer into the thickest part of the thigh (without touching bone); it should read 165°F.
  7. Remove chicken from oven and let rest for 10–15 minutes to allow juices to redistribute.
  8. Carve the chicken and drizzle with any extra glaze or pan juices. Garnish with fresh parsley if desired.

Notes

For extra crispy skin, let the chicken air-chill in the fridge before roasting. Use tamari for gluten-free or olive oil for dairy-free. Baste with glaze before roasting and again near the end for best caramelization. Tent with foil if glaze darkens too quickly. Resting the chicken before carving is crucial for juiciness.
