A potent, homemade immune tonic made with raw apple cider vinegar, garlic, ginger, horseradish, and honey. This traditional remedy is perfect for daily maintenance during cold and flu season, offering a warming, sinus-clearing kick in a daily shot.

Ingredients

Scale
  • 2 cups (480 ml) raw, unfiltered apple cider vinegar (with the mother)
  • 1/4 cup (85 g) raw honey, or more to taste
  • 1 whole head fresh garlic (about 1012 cloves), peeled and crushed
  • 3-inch piece fresh ginger root (about 60 g), sliced thin
  • 2-inch piece fresh turmeric root (about 40 g), sliced thin (or 1 tsp dried ground turmeric)
  • 2-inch piece fresh horseradish root (about 30 g), peeled and chopped
  • 1/2 medium onion, yellow or red (about 80 g), roughly chopped
  • 1 small fresh jalapeño or habanero pepper, sliced (optional, for extra heat)
  • 1 sprig fresh rosemary (optional)
  • 23 sprigs fresh thyme (optional)
  • 1 teaspoon whole black peppercorns
  • 1/4 teaspoon cayenne pepper (or to taste)

Instructions

  1. Prep your ingredients: Peel and crush the garlic cloves. Slice the ginger and turmeric into thin coins. Chop the horseradish root into small chunks. Roughly chop the onion. Slice the jalapeño if using. Rinse and gently bruise the rosemary and thyme sprigs.
  2. Layer everything in the jar: Place the crushed garlic, sliced ginger, turmeric, horseradish, onion, and pepper (if using) into a clean 32-ounce glass jar. Tuck in the rosemary and thyme sprigs. Add the whole black peppercorns. Do not pack too tightly.
  3. Add the honey: Pour the raw honey over the solids.
  4. Pour in the apple cider vinegar: Pour the vinegar over everything until the solids are completely submerged, leaving at least an inch of vinegar above the ingredients.
  5. Seal and shake: Screw the lid on tightly and shake the jar well to start incorporating the honey.
  6. Label and store: Write the date on the jar and store in a cool, dark place (like a pantry) away from direct sunlight.
  7. The waiting game: Let the jar sit for at least 2 weeks, but 4 weeks is better. Shake the jar gently every day or two.
  8. Strain and bottle: After 2-4 weeks, strain the mixture through a fine-mesh strainer lined with cheesecloth into a large bowl or pitcher. Squeeze the cheesecloth to extract all the liquid. Discard the solids.
  9. Add the cayenne: Stir in the cayenne pepper. Start with 1/4 teaspoon and adjust to taste.
  10. Final bottling: Using a funnel, pour the finished fire cider into clean glass bottles or jars. Store in the refrigerator.

Notes

Use raw, unfiltered apple cider vinegar with the mother for best results. Crush garlic cloves rather than mincing to avoid bitterness. Patience is key—a 4-week infusion yields the best flavor. Be careful when chopping fresh horseradish; do it near an open window or under an exhaust fan. Shake the jar daily during infusion. The finished tonic can be stored in the refrigerator for up to a year. Start with a 1 oz shot daily during cold and flu season; can be taken 2-3 times daily if feeling a cold coming on.
