  • 2 pounds beef chuck roast, trimmed of excess fat and cut into large chunks
  • 4 cups beef broth (low-sodium)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 large carrots, peeled and sliced
  • 2 ribs celery, chopped
  • 12 ounces egg noodles (wide, curly noodles)
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup heavy cream (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the beef chunks with salt and pepper, then sear them on all sides until browned.
  2. Transfer the browned beef to your slow cooker. Add the chopped onion, garlic, carrots, and celery.
  3. Pour in the beef broth and Worcestershire sauce. Stir gently to combine.
  4. Set the slow cooker to low heat and cook for 7-8 hours, or until the beef is fork-tender. Alternatively, cook on high for 4-5 hours.
  5. About 30 minutes before the cooking time is up, stir in the egg noodles, ensuring they are submerged in the broth.
  6. If desired, add the heavy cream for a creamy finish. Let it simmer with the noodles during the last 10 minutes of cooking.
  7. Serve hot, garnished with fresh parsley.
