Instructions

  1. Crack 4 large eggs into a medium mixing bowl.
  2. Add 1/4 cup milk.
  3. Finely chop parsley, basil, and spinach (if using).
  4. Dice ham into bite-sized pieces.
  5. Mince garlic.
  6. Whisk eggs and milk together until frothy and fully combined.
  7. Stir in chopped parsley, basil, spinach, garlic, salt, pepper, and Parmesan (if using).
  8. Heat olive oil or butter in a nonstick skillet over medium heat.
  9. Add diced ham and cook, stirring, until lightly browned and fragrant (1-2 minutes).
  10. Reduce heat to medium-low.
  11. Pour the green egg mixture over the ham in the skillet.
  12. Let sit undisturbed for 30 seconds, then gently stir and fold with a spatula.
  13. Continue stirring every 15-30 seconds until eggs are just set but still creamy (about 4-5 minutes).
