  • 1 lb sirloin steak, cut into bite-sized pieces
  • 2 tbsp olive oil (for searing)
  • Salt and black pepper (to taste)
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and black pepper (to taste)
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a mixing bowl, toss the halved baby potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Ensure they’re evenly coated.
  2. Heat a large skillet over medium-high heat and add 2 tbsp olive oil. Place the potatoes cut-side down in the skillet and cook for 12-15 minutes, flipping halfway through, until golden and tender. Remove from skillet and set aside.
  3. Season the steak bites with salt and black pepper. Heat the skillet again over high heat and add 2 tbsp olive oil. Sear the steak bites for 2-3 minutes per side until browned and cooked to your preferred doneness. Remove from skillet and set aside.
  4. Lower the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and cook for 30 seconds until fragrant.
  5. Return the steak and potatoes to the skillet, tossing to coat them in the garlic butter sauce. Let everything warm through for 2-3 minutes.
  6. Sprinkle with fresh parsley if desired, and serve immediately while hot.

Notes

Don’t overcrowd the pan to ensure proper caramelization. Use unsalted butter to control the salt level. Adjust seasoning to taste and let the steak rest briefly after cooking for maximum juiciness.
