Garlic Butter Steak Bites & Smashed Potatoes Recipe

Tender steak bites in a rich garlic butter sauce paired with crispy smashed potatoes for a comforting and indulgent meal.

  • 1 lb sirloin steak or ribeye, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • Salt and freshly ground black pepper, to taste
  • 1 tsp fresh parsley, chopped (optional, for garnish)
  • 1 lb small Yukon Gold or baby potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp grated Parmesan cheese (optional, for extra flavor)

Instructions

  1. Boil the baby potatoes in salted water for 15-20 minutes or until fork-tender. Drain and let them cool slightly.
  2. Preheat your oven to 425°F (220°C). Place the potatoes on a baking sheet lined with parchment paper, and gently smash each one with a masher or glass bottom. Drizzle with olive oil, sprinkle garlic powder, dried thyme, salt, and pepper. Roast for 25-30 minutes or until crispy and golden.
  3. Heat olive oil in a large skillet over medium-high heat. Add the steak cubes in a single layer and season with salt and pepper. Sear for 2-3 minutes per side until browned and caramelized. Remove the steak and set aside.
  4. Reduce the heat to medium, and melt the butter in the same skillet. Add minced garlic and sauté for 30-60 seconds until fragrant. Return the steak bites to the skillet and toss to coat in the sauce.
  5. Plate the steak bites alongside the crispy smashed potatoes. Drizzle any extra garlic butter sauce over the potatoes for added flavor. Garnish with fresh parsley if desired.

Notes

Pat the steak dry before cutting to ensure a perfect sear. Don’t overcrowd the skillet to avoid steaming. Keep an eye on the garlic while making the butter sauce to prevent burning.
