  • 2 pounds baby gold or red potatoes, halved
  • 3 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked and crumbled bacon (about 6 strips)
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh chives or green onions
  • 1/4 cup pickled jalapeños (optional)
  • 1/4 cup melted butter

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash and halve the potatoes. Pat them dry with a clean kitchen towel.
  3. In a large bowl, combine the halved potatoes, olive oil, cornstarch, garlic powder, smoked paprika, salt, and pepper. Toss until evenly coated.
  4. Arrange the potatoes in a single layer on the baking sheet, cut-side down. Do not overcrowd.
  5. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  6. While the potatoes roast, prepare the toppings: cook and crumble bacon, shred cheese, chop chives or green onions.
  7. Remove potatoes from oven and immediately brush with melted butter.
  8. Arrange the potatoes on a large board in a football shape (oval), starting with a line down the center and building outward.
  9. Place the toppings in small bowls around the board: sour cream, cheese, bacon, chives, and jalapeños.
  10. Serve immediately while warm. Let guests build their own loaded potatoes.

Notes

Don’t skip the cornstarch—it creates ultra-crispy skins. Flip potatoes halfway through roasting for even browning. Let potatoes cool 5 minutes before arranging on board to prevent sogginess. Serve toppings on the side to keep potatoes crispy. For make-ahead, roast potatoes up to 2 hours ahead and reheat at 400°F for 5-7 minutes before serving.
