  • 1 ½ cups (300g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125g) all-purpose flour, sifted
  • ¾ cup (75g) unsweetened cocoa powder, preferably natural
  • ½ teaspoon salt
  • 1 teaspoon espresso powder (optional)
  • 1 cup (170g) semi-sweet chocolate chips
  • ½ cup fresh mint leaves, tightly packed, finely chopped
  • ½ cup (120ml) heavy cream
  • 2 tablespoons powdered sugar
  • A few drops light green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch pan or line it with parchment paper, leaving an overhang for easy removal.
  2. Prepare the mint swirl: In a small bowl, combine heavy cream, powdered sugar, and finely chopped fresh mint leaves. Blend until smooth using a whisk or food processor. Add green food coloring if desired. Chill in the fridge for about 10 minutes.
  3. Sift together flour, cocoa powder, salt, and espresso powder in a medium bowl. Set aside.
  4. In a large bowl, whisk melted butter with granulated and brown sugar until just combined. Add eggs one at a time, whisking after each. Stir in vanilla extract.
  5. Fold the sifted dry ingredients into the wet ingredients gently with a rubber spatula until just combined. Avoid overmixing.
  6. Fold ¾ cup (about 130g) of the chocolate chips into the batter, reserving the rest for topping.
  7. Pour half the batter into the prepared pan and smooth it out. Dollop spoonfuls of the chilled mint cream swirl evenly over the batter.
  8. Carefully spoon the remaining brownie batter on top.
  9. Using a butter knife or skewer, gently swirl the mint cream through the batter to create a marbled green effect.
  10. Sprinkle the remaining chocolate chips on top.
  11. Bake for 30-35 minutes until edges look set but center is still slightly soft. A toothpick inserted near the center should come out with a few moist crumbs.
  12. Cool completely in the pan before slicing using the parchment overhang.
