Fresh Watermelon Feta Summer Salad

A refreshing and easy summer salad combining juicy watermelon, salty feta, fresh mint, and a tangy lime vinaigrette. Perfect for hot days and summer gatherings.

  • 4 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 1 medium cucumber, peeled and diced
  • 1/4 small red onion, thinly sliced (optional)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey or agave syrup
  • Freshly ground black pepper, to taste
  • Light sprinkle of sea salt

Instructions

  1. Using a sharp knife, cut about 4 cups (around 600 grams) of seedless watermelon into bite-sized cubes (about 1 inch). Place in a large mixing bowl.
  2. Peel 1 medium cucumber and chop into similar-sized cubes as the watermelon. Add to the bowl.
  3. Thinly slice about 1/4 of a small red onion (optional) and add to the bowl.
  4. Crumble 1 cup (about 150 grams) of feta cheese over the salad.
  5. Roughly chop 1/4 cup fresh mint leaves and sprinkle into the bowl.
  6. In a small bowl, whisk together 2 tablespoons fresh lime juice, 2 tablespoons extra virgin olive oil, and 1 teaspoon honey or agave syrup. Add a pinch of sea salt and freshly ground black pepper to taste.
  7. Pour the dressing over the salad ingredients and gently toss to combine, being careful not to smash the watermelon cubes.
  8. Taste and adjust seasoning with additional salt, pepper, or lime juice if needed.
  9. Chill the salad in the refrigerator for 10-15 minutes before serving to meld flavors.

Notes

Use a sharp knife to cut watermelon and cucumber to avoid bruising and sogginess. Crumble feta with some larger chunks for texture. Toss salad gently to coat without crushing watermelon. Chill before serving for best flavor. Store leftovers in airtight container and drain excess juice before serving again.
