Fresh Spring Vegetable Frittata with Creamy Goat Cheese

  • 6 large eggs, room temperature
  • 4 oz goat cheese, softened
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 1 cup sugar snap peas, trimmed and halved
  • 3 spring onions, thinly sliced
  • 1 tsp fresh thyme leaves
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 3 tbsp whole milk or cream (optional, can substitute almond milk for dairy-free)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 2 tablespoons olive oil in your oven-safe skillet over medium heat. Add asparagus, sugar snap peas, and spring onions. Sauté for 5–7 minutes until veggies are tender but still slightly crisp. Season lightly with salt and pepper.
  3. In a large mixing bowl, whisk together the eggs, softened goat cheese, milk or cream, thyme, salt, and pepper until smooth with some lumps from the goat cheese.
  4. Pour the egg mixture over the sautéed vegetables in the skillet, spreading evenly. Cook on the stovetop over medium heat for 2–3 minutes until edges begin to set but the center is still runny. If your skillet isn’t oven-safe, transfer mixture to a greased baking dish now.
  5. Transfer the skillet to the preheated oven and bake for 12–15 minutes, or until the frittata is puffed and golden on top and a toothpick inserted near the center comes out clean. Let it rest for 5 minutes before slicing.

Notes

Use room temperature eggs for even cooking. Don’t overcook the veggies during sautéing to avoid mushiness. Let the frittata rest before slicing to firm up the texture. If cheese browns too quickly in the oven, tent loosely with foil. Can substitute veggies seasonally or use vegan cheese and chickpea flour for a vegan version.
