Fresh Spring Vegetable Crudité with Creamy Herb Dip

A quick and easy healthy snack featuring crisp spring vegetables paired with a creamy, tangy herb dip made from cream cheese and Greek yogurt.

  • Baby carrots, washed and trimmed
  • Snap peas, strings removed if needed
  • Radishes, sliced thin
  • Cucumber, peeled and cut into sticks
  • Cherry tomatoes, halved
  • Celery stalks, cut into sticks
  • 8 oz cream cheese, softened
  • 1/2 cup plain full-fat Greek yogurt
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely sliced
  • 1 teaspoon fresh dill, chopped (optional)
  • 1 garlic clove, minced
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon extra-virgin olive oil (optional)

Instructions

  1. Rinse all vegetables thoroughly under cold water. Peel and trim baby carrots, slice cucumbers into 3-inch sticks, halve cherry tomatoes, slice radishes thinly, and cut celery into sticks. Remove strings from snap peas if needed. Arrange vegetables on a serving platter or in individual bowls.
  2. In a medium mixing bowl, combine softened cream cheese and Greek yogurt. Whisk or stir until smooth and creamy.
  3. Add chopped parsley, chives, dill (if using), minced garlic, lemon juice, salt, and pepper. Stir to combine. Optionally, drizzle olive oil and mix gently. Taste and adjust seasoning as needed.
  4. For best flavor, cover the dip and chill in the refrigerator for at least 10 minutes to let the herbs infuse. Serving immediately is also fine.
  5. Before serving, stir the dip again and garnish with extra herb sprigs or a sprinkle of smoked paprika or cracked pepper if desired.

Notes

If cream cheese is too cold and lumpy, microwave for 10 seconds to soften before mixing. Keep knives sharp to slice vegetables cleanly without squishing. For ultra-smooth dip, use a small food processor. Soak veggies in ice water for 5 minutes if they start to lose crunch. The dip can be made ahead and chilled for better flavor. Store dip covered in fridge up to 3 days; store veggies separately in airtight containers with a damp paper towel.
