  • 6 cups spring mix greens (loosely packed)
  • 1 large orange, peeled and sectioned (membranes removed)
  • 1 grapefruit, peeled and sectioned (membranes removed)
  • ½ cup crumbled feta cheese
  • ¼ cup thinly sliced red onion
  • ¼ cup toasted walnuts or pecans, roughly chopped (optional)
  • 2 tablespoons chopped fresh parsley or mint
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon honey or maple syrup
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. Peel the orange and grapefruit, removing all white pith. Segment the fruit by cutting between membranes to yield about 1 cup of orange segments and 1 cup of grapefruit segments. Set aside.
  2. Thinly slice ¼ cup of red onion. Optional: soak slices in cold water for 5 minutes to mellow the bite, then drain.
  3. Toast the walnuts or pecans in a dry skillet over medium heat until fragrant and lightly golden, about 3-5 minutes. Stir frequently to avoid burning. Remove from heat and let cool.
  4. In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, Dijon mustard, honey or maple syrup, and a pinch of salt and pepper. Adjust seasoning to taste.
  5. Place spring mix greens in a large salad bowl. Add citrus segments, sliced red onion, toasted nuts, and fresh herbs. Drizzle the dressing over the top.
  6. Gently toss the salad using salad tongs or clean hands to combine without bruising the greens or crushing the citrus.
  7. Sprinkle crumbled feta cheese over the top just before serving.
  8. Taste and adjust with additional salt, pepper, or lemon juice if needed. Serve immediately.

Notes

For dairy-free, swap feta for vegan cheese crumble or omit. Use raw nuts for softer texture or omit for nut-free version. Prepare onions and herbs ahead, but toss salad and add feta just before serving to keep freshness. Store dressing separately if making ahead. Toast nuts first if multitasking.
