Fresh Peach Basil Iced Tea

A refreshing summer iced tea combining the juicy sweetness of fresh peaches with the herbal aroma of basil, lightly sweetened and perfectly balanced with lemon juice.

  • 4 black tea bags (e.g., Twinings or Lipton)
  • 2 medium fresh ripe peaches, thinly sliced
  • About 12 fresh basil leaves, washed and gently bruised
  • 4 cups (950 ml) filtered or spring water
  • 23 tablespoons honey or agave syrup, adjust to taste
  • 1 tablespoon freshly squeezed lemon juice
  • Ice cubes for serving
  • Optional: mint leaves for a refreshing twist
  • Optional: additional peach slices for garnish

Instructions

  1. Bring 4 cups (950 ml) of filtered water to a rolling boil in a kettle or pot (about 5 minutes).
  2. Place 4 black tea bags into a large heatproof pitcher. Pour the boiling water over the tea bags and steep for 5-7 minutes until a rich amber color develops without bitterness.
  3. Remove the tea bags, gently pressing them with a spoon to extract flavor. While the tea is still warm, stir in 2-3 tablespoons of honey or agave syrup until fully dissolved. Adjust sweetness to taste.
  4. While the tea steeps, wash and thinly slice 2 medium ripe peaches.
  5. Add the peach slices and 12 bruised basil leaves to the warm tea. Let the mixture cool to room temperature for 15-20 minutes to infuse flavors.
  6. Once cooled, stir in 1 tablespoon of freshly squeezed lemon juice to add brightness and balance sweetness.
  7. Fill glasses with ice cubes and pour the peach basil iced tea over the top. Garnish with additional peach slices and a sprig of basil if desired. Serve immediately or refrigerate for up to 24 hours.

Notes

Do not steep tea longer than 7 minutes to avoid bitterness. Gently bruise basil leaves to release aroma without overpowering bitterness. Adjust sweetness gradually. Remove basil leaves before chilling if storing overnight to prevent bitterness. Use frozen peaches if fresh are unavailable. For caffeine-free version, substitute black tea with rooibos or herbal tea.
