A quick and refreshing summer salad combining juicy melons with fresh mint and a hint of lime, perfect for picnics, potlucks, or a light dessert.

  • 3 cups seedless watermelon, cut into bite-sized cubes (about 450g)
  • 2 cups ripe cantaloupe, peeled and cubed (about 300g)
  • 2 cups honeydew melon, peeled and cubed (about 300g)
  • 1/4 cup fresh mint leaves, roughly chopped or whole
  • Juice of 1 large lime
  • 1 tablespoon honey or agave syrup (optional)
  • Pinch of sea salt

Instructions

  1. Rinse the watermelon, cantaloupe, and honeydew under cool water. Using a sharp chef’s knife, cut the melons into 1-inch bite-sized cubes.
  2. Rinse fresh mint leaves and pat dry. Roughly chop or leave whole. Gently bruise the mint leaves by folding and pressing them with your fingers to release oils.
  3. In a large mixing bowl, combine the melon cubes and bruised mint. Drizzle fresh lime juice over the mixture, add a pinch of sea salt, and honey or agave syrup if desired. Toss gently to coat without breaking the melon pieces.
  4. Cover the bowl with plastic wrap or a reusable lid and refrigerate for at least 30 minutes to chill and allow flavors to meld.
  5. Before serving, give the salad a gentle toss. Adjust sweetness or lime juice if needed. Serve chilled in bowls or glasses.

Use ripe melons for best flavor. Cut melons evenly for balanced bites. Gently bruise mint leaves to release oils. Chill salad before serving for optimal refreshment. Adjust sweetness gradually to avoid overpowering melon flavor.
