  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Drain and flake the tuna into a mixing bowl using a fork, keeping bite-sized pieces intact.
  2. Cut the avocado in half, remove the pit, scoop the flesh into a small bowl, and lightly mash until creamy but still chunky.
  3. Dice the cucumber, red bell pepper, and finely chop the red onion and parsley. Prepare cherry tomatoes and greens if using.
  4. In a small bowl, whisk together fresh lemon juice, extra virgin olive oil, sea salt, and black pepper to make the dressing.
  5. Add the mashed avocado to the flaked tuna, then toss in all chopped veggies and herbs.
