A quick, healthy, and easy frozen yogurt bark featuring creamy Greek yogurt, fresh berries, and crunchy pistachios. Perfect as a refreshing snack or light dessert.

  • 2 cups (475 ml) plain full-fat Greek yogurt (e.g., FAGE or Chobani)
  • 2 tablespoons (30 ml) honey (optional)
  • 1 cup (150 grams) fresh berries (blueberries, raspberries, or strawberries)
  • 1/3 cup (50 grams) shelled and roughly chopped pistachios
  • 1 teaspoon (5 ml) vanilla extract
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Mix the base: In a mixing bowl, combine 2 cups of plain Greek yogurt with 2 tablespoons of honey and 1 teaspoon of vanilla extract. Stir gently until smooth and well blended. Fold in lemon zest if using.
  2. Prepare your tray: Line a rimmed baking sheet (about 9×13 inches or 23×33 cm) with parchment paper or a silicone baking mat.
  3. Spread the yogurt: Pour the yogurt mixture onto the lined tray and spread evenly to about 1/4 inch (6 mm) thickness using a spatula or spoon.
  4. Add toppings: Scatter 1 cup of fresh berries evenly over the yogurt, then sprinkle the chopped pistachios on top, pressing lightly so they stick.
  5. Freeze: Place the tray flat in the freezer and freeze until solid, at least 4 hours or overnight for best results.
  6. Break into pieces: Remove the bark from the tray by lifting the parchment paper and break or cut into irregular pieces. Store in an airtight container or freezer bag.

Notes

Use full-fat Greek yogurt for creamiest texture. If yogurt is too soft to spread, chill for 10 minutes before spreading. Avoid thawed frozen berries to prevent sogginess. Honey is optional and can be substituted with maple syrup or agave nectar. For dairy-free, use coconut yogurt. Pistachios can be replaced with almonds, walnuts, or pumpkin seeds for nut-free options.
