  • 1 teaspoon Dijon mustard

  • 4 large butter croissants, fresh or day-old

Instructions

  1. Toast the almonds: Heat a dry skillet over medium heat. Add sliced almonds and toast, stirring frequently, until golden and fragrant (about 2-3 minutes). Remove from heat and let cool.
  2. Prepare the fresh ingredients: Rinse and halve the grapes, dice the celery finely, and slice the green onion thinly. Set aside.
  3. Combine the dressing: In a mixing bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until smooth and creamy.
  4. Add chicken and mix: Add shredded chicken to the bowl. Gently fold to coat the chicken evenly with the dressing, avoiding overmixing to keep chicken chunky.
  5. Fold in fresh ingredients: Add diced celery, halved grapes, sliced green onion, and toasted almonds. Stir gently to combine.
  6. Prepare the croissants (optional): Warm croissants in a preheated oven at 350°F (175°C) for 3-4 minutes to refresh flakiness.
  7. Assemble the sandwiches: Slice each croissant horizontally without cutting all the way through. Spoon a generous amount of chicken salad onto the bottom half, then close the sandwich gently.
