Fresh Cherry Tomato Salad Recipe with Basil and Balsamic Glaze

A quick and easy summer salad featuring ripe cherry tomatoes, fresh basil, and a sweet-tart balsamic glaze. Perfect as a light side dish or a fresh addition to any meal.

  • 2 cups (about 300 grams) fresh cherry tomatoes, halved
  • 1 cup loosely packed fresh basil leaves, roughly torn
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic glaze
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1/2 cup crumbled fresh mozzarella or feta cheese

Instructions

  1. Rinse 2 cups (about 300 grams) of fresh cherry tomatoes under cold water. Gently pat them dry with a clean towel. Slice each tomato in half using a sharp knife.
  2. Place the halved tomatoes in a mixing bowl. Drizzle with 2 tablespoons of extra virgin olive oil and sprinkle with a pinch of sea salt. Gently toss to coat all the tomatoes evenly. Let this sit for 5 minutes to macerate.
  3. Tear about 1 cup of fresh basil leaves into bite-sized pieces and add them to the bowl. Toss gently to combine.
  4. Grind freshly ground black pepper over the salad to taste.
  5. Drizzle 3 tablespoons of balsamic glaze over the salad. If using, sprinkle crumbled fresh mozzarella or feta cheese over the top.
  6. Give the salad one last gentle toss to distribute the balsamic glaze and cheese evenly. Transfer to a serving platter or bowl immediately.

Notes

Avoid tossing the salad too vigorously after adding balsamic glaze to prevent tomatoes from breaking down and becoming watery. For a cooler salad, refrigerate for 10 minutes before serving. Store leftovers in an airtight container for up to 24 hours, keeping balsamic glaze separate if possible.
