A simple yet flavorful parfait combining creamy Greek yogurt, fresh mixed berries, and crunchy homemade honey granola. Perfect for a quick breakfast or refreshing snack.

  • 2 cups (480 ml) Greek yogurt (plain or vanilla)
  • 1 ½ cups (225 g) fresh mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 3 tablespoons (60 ml) honey, preferably raw or wildflower
  • 1 cup (90 g) old-fashioned rolled oats
  • ¼ cup (30 g) almonds, roughly chopped
  • 1 tablespoon (15 g) chia seeds
  • 2 tablespoons (10 g) unsweetened coconut flakes (optional)
  • 2 tablespoons (40 ml) honey (for granola)
  • 2 tablespoons (30 g) coconut oil or unsalted butter, melted
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone mat to avoid sticking.
  2. In a medium bowl, combine rolled oats, chopped almonds, chia seeds, coconut flakes, ground cinnamon, and a pinch of salt.
  3. In a small bowl, whisk together honey, melted coconut oil or unsalted butter, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  5. Spread the granola mixture evenly on the prepared baking sheet.
  6. Bake for 15–18 minutes, stirring halfway through to toast evenly. Watch closely near the end to prevent burning.
  7. Remove from oven and let the granola cool completely on the baking sheet; it will crisp up as it cools.
  8. While the granola bakes, rinse and gently pat dry the mixed berries. Hull and slice strawberries into bite-sized pieces if using.
  9. To assemble, start with about ¼ cup (60 ml) Greek yogurt at the bottom of each glass or jar.
  10. Add a layer of fresh berries (about 3 tablespoons / 45 g), then sprinkle with cooled granola (around 2 tablespoons / 15 g).
  11. Repeat the layers once more, finishing with a drizzle of honey on top.
  12. Serve immediately for maximum crunch, or refrigerate for up to 4 hours if prepping ahead (note: granola will soften slightly over time).

Notes

Use full-fat Greek yogurt for creamiest texture. For gluten-free, use certified gluten-free oats. Nuts can be substituted with seeds for allergies. To keep granola crunchy, store separately and add just before serving. For extra creaminess, fold a tablespoon of honey into the yogurt before layering.
