A cozy and indulgent breakfast featuring thick-cut bread stuffed with creamy mascarpone and fresh strawberries, soaked in a spiced egg batter and cooked to golden perfection.

Ingredients

Scale
  • 1 cup mascarpone cheese (about 240 grams), softened
  • 1 cup fresh strawberries, diced
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs, room temperature
  • 1 cup whole milk (240 ml)
  • 1/2 cup heavy cream (120 ml), optional
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons granulated sugar
  • Pinch of salt
  • 8 slices thick-cut brioche or challah bread (day-old preferred)
  • About 2 tablespoons unsalted butter for frying
  • Optional toppings: fresh strawberries or fruit compote, maple syrup, powdered sugar for dusting, whipped cream

Instructions

  1. Prepare the mascarpone filling: In a medium bowl, combine softened mascarpone, powdered sugar, and vanilla extract. Whisk or use an electric mixer until smooth and creamy. Fold in diced strawberries gently. Set aside.
  2. Mix the batter: In a large bowl, whisk together eggs, whole milk, heavy cream, cinnamon, nutmeg, granulated sugar, vanilla extract, and a pinch of salt until combined and slightly frothy.
  3. Prep the bread slices: Carefully cut a pocket or slit in the middle of each thick-cut bread slice, creating space for the mascarpone mixture without cutting all the way through.
  4. Stuff the bread: Fill each bread pocket with the mascarpone-strawberry mixture using a spoon or small spatula. Press edges gently to seal slightly without airtight sealing.
  5. Soak the stuffed bread: Dip each stuffed slice in the egg batter, soaking about 20-30 seconds per side, ensuring bread absorbs enough but does not become soggy.
  6. Cook the French toast: Heat a non-stick skillet or griddle over medium heat and melt a tablespoon of butter. Cook the soaked stuffed bread slices for 3-4 minutes per side until golden brown and slightly crisp. Adjust heat as needed.
  7. Serve immediately: Transfer to plates and add optional toppings like fresh strawberries, maple syrup, or powdered sugar. Serve hot for best texture.

Notes

Use day-old or slightly stale bread for best soaking results. Do not over-soak the bread to avoid sogginess. Medium heat cooking prevents burning and ensures the filling warms through. Seal edges gently to prevent filling leakage. Fresh mascarpone yields the creamiest filling. Variations include using different berries, vegan substitutes, or gluten-free bread.
