  • 1 teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • 2 tablespoons milk powder (optional)

Instructions

  1. Activate the yeast (10 minutes): In a mixing bowl, combine warm milk (110°F / 43°C) with active dry yeast and 1 tablespoon sugar. Stir gently and let sit until foamy and bubbly.
  2. Mix wet ingredients (5 minutes): Add melted butter, honey, eggs, and vanilla extract (if using) to the yeast mixture. Whisk until combined.
  3. Add dry ingredients (5 minutes): Gradually add flour, salt, remaining sugar, and milk powder (if using). Stir until a shaggy dough forms.
  4. Knead the dough (10-15 minutes): Knead on a floured surface until smooth, elastic, and slightly tacky but not sticky. Or use a stand mixer with dough hook on medium speed for 8 minutes.
  5. First rise (1 to 1.5 hours): Place dough in a greased bowl, cover, and let rise in a warm spot until doubled in size.
  6. Shape the rolls (10 minutes): Punch down dough, divide into 12 equal pieces (~2.5 oz / 70g each), and shape into smooth balls.
  7. Second rise (30-45 minutes): Arrange dough balls snugly in a greased 9×13-inch pan, cover, and let rise until puffy and touching.
  8. Bake (20-25 minutes): Preheat oven to 375°F (190°C). Bake rolls until golden brown and spring back when pressed.
  9. Apply golden glaze (immediately after baking): Melt 2 tablespoons butter and stir in 1 tablespoon honey. Brush over hot rolls.
  10. Cool slightly (10 minutes): Let rolls rest on a cooling rack before serving.

Notes

Use warm milk around 110°F to activate yeast properly. Knead dough until elastic but not sticky. Brush glaze immediately after baking for best shine and moisture. Two-step rise yields fluffiest rolls. Can substitute whole milk with 2% or unsweetened almond milk. For vegan version, replace butter with coconut oil or vegan margarine and eggs with flax eggs.
