  • 2 1/4 teaspoons active dry yeast
  • 2 tablespoons granulated sugar
  • 1 tablespoon honey (optional)
  • 1 teaspoon salt

  • 1/4 cup unsalted butter, melted
  • 23 cloves fresh garlic, minced
  • 1/2 cup parmesan cheese, finely grated
  • 1 teaspoon Italian seasoning (optional)
  • 12 tablespoons chopped fresh parsley
  • Coarse salt or flaky sea salt, for sprinkling

Instructions

  1. In a large mixing bowl, combine warm water, granulated sugar, and active dry yeast. Stir and let sit for 5–10 minutes until foamy.
  2. Add honey and olive oil to the foamy yeast mixture. Whisk gently to combine.
  3. Add all-purpose flour and salt to the bowl. Mix with a wooden spoon until a shaggy dough forms. If using a stand mixer, use the dough hook on low speed for 1–2 minutes.
  4. Knead by hand on a lightly floured surface for 6–8 minutes (or in the mixer for 5 minutes) until smooth, elastic, and slightly tacky. Adjust with water or flour as needed.
  5. Place the dough in a lightly oiled bowl, cover, and let rise in a warm spot for 30 minutes, or until doubled in size.
  6. While the dough rises, melt butter and stir in minced garlic. Set aside. Mix parmesan, Italian seasoning, and chopped parsley in another bowl.
  7. Punch down the risen dough. On a floured surface, roll out into a rectangle (about 9×13 inches). Use a sharp knife or pizza cutter to slice into 12 even strips.
  8. Place strips on a parchment-lined baking sheet, spaced about 1 inch apart. Cover loosely and let rise for 15 minutes.
  9. Preheat oven to 375°F. Brush breadsticks generously with garlic butter, then sprinkle with parmesan mixture and a pinch of flaky salt.
  10. Bake for 16–18 minutes, until golden brown and fragrant. For a crispier crust, bake an extra 2 minutes.
  11. Brush with any leftover garlic butter while hot. Garnish with more parsley if desired. Let cool for 3–5 minutes before serving.

Notes

For gluten-free breadsticks, use a 1:1 gluten-free flour blend and add 1/2 tsp xanthan gum. For vegan, substitute butter with vegan margarine and parmesan with nutritional yeast. Don’t skip the second rise for extra fluffiness. Brush breadsticks with butter before and after baking for maximum flavor. Store leftovers in an airtight container at room temperature for up to 2 days, or freeze for up to 2 months.
