  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 ¼ cups (300ml) buttermilk (or 1 cup milk + 1 tablespoon lemon juice, let sit 5 minutes)
  • 1 large egg, room temperature
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until evenly distributed.
  2. In a separate medium bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold together until just combined; lumps are fine. Do not overmix.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour ¼ cup batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook the other side for 1-2 minutes until golden brown. Adjust heat as needed.

Notes

Do not overmix the batter to keep pancakes fluffy. Let batter rest 5-10 minutes before cooking. Use medium heat to avoid burning. Keep cooked pancakes warm in a low oven. Fresh leavening agents ensure good rise.
