Ingredients

  • Pickled or tangy elements: pickled jalapeños or banana peppers, quick pickled carrots or Vietnamese pickled vegetables
  • Cheese options: feta (crumbled), shredded cheddar or mozzarella
  • Sauces & spreads: guacamole or mashed avocado, sour cream or Greek yogurt, chipotle mayo or sriracha, fresh herb pesto (basil, cilantro)
  • Seasonings: salt and pepper, smoked paprika or cumin, lemon or lime juice

Instructions

  1. Prep your ingredients (10-15 minutes): Wash and chop all fresh veggies into bite-sized pieces. Dice hard-boiled eggs or shred cooked chicken. Measure out beans, cheese, and sauces into small bowls for easy assembly.
  2. Warm your tortilla (1-2 minutes): Heat a non-stick skillet over medium heat. Place one tortilla flat in the pan and warm until soft and pliable, about 30 seconds per side.
  3. Divide the tortilla into four quadrants by imagining two intersecting lines in the center.
  4. Fill each quadrant with a different filling: (a) Spread mashed avocado mixed with lime juice and salt; (b) Add shredded chicken tossed with chipotle mayo; (c) Place diced cucumbers, tomatoes, and pickled jalapeños; (d) Spoon black beans topped with crumbled feta and a sprinkle of smoked paprika.
