  • ½ cup (about 75g) crumbled feta cheese
  • 1 cup (about 30g) fresh spinach, finely chopped
  • 2 cloves garlic, minced
  • ¼ cup onion, finely chopped or grated
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 4 whole wheat or brioche buns (optional, for serving)
  • Optional toppings: sliced tomatoes, red onion rings, tzatziki sauce, avocado slices

Instructions

  1. Finely chop 1 cup fresh spinach and ¼ cup onion. Mince 2 garlic cloves. If using frozen spinach, thaw completely and squeeze out excess moisture.
  2. In a medium mixing bowl, add 1 pound ground turkey, crumbled ½ cup feta cheese, chopped spinach, onion, and garlic. Sprinkle in 1 teaspoon dried oregano, ¼ teaspoon red pepper flakes (if using), and season with salt and black pepper. Drizzle 1 tablespoon olive oil over the mixture.
  3. Using your hands or a spoon, mix ingredients together carefully. Don’t overwork the meat; just combine until evenly distributed.
  4. Divide the mixture into 4 equal portions. Shape each into a patty about ¾ inch (2 cm) thick, making a slight indentation in the center with your thumb to prevent puffing up during cooking. Wet your hands with water to avoid sticking.
  5. Heat a non-stick skillet or grill pan over medium-high heat. Add a little olive oil or spray to prevent sticking.
  6. Place patties on the hot pan. Cook for about 5-6 minutes on the first side without moving them to develop a nice crust. Flip carefully and cook another 5-6 minutes, or until the internal temperature reaches 165°F (74°C). Do not press down on the patties while cooking.
  7. Once cooked, transfer to a plate and let rest for 3-4 minutes to allow juices to redistribute.
  8. If desired, lightly toast buns in the pan or oven. Assemble burgers with your favorite toppings like sliced tomato, red onion, and a dollop of tzatziki or avocado.

Notes

Do not overmix the turkey to keep patties tender. Let ground turkey come to room temperature before mixing. Make a thumb indentation in patties to prevent puffing. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C). Rest patties after cooking for juiciness. If patties feel fragile, add a tablespoon of breadcrumbs. Frozen spinach can be used if thawed and squeezed dry. For dairy-free, substitute feta with vegan cheese or omit and add lemon juice. For gluten-free, serve on lettuce wraps or gluten-free buns.
