  • 1 teaspoon paprika
  • 1 teaspoon garlic powder

  • 1 cup roasted red peppers, chopped
  • 2 cups fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/3 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Chopped parsley (optional)
  • Extra Parmesan cheese (optional)

Instructions

  1. Using a sharp knife, slice each chicken breast lengthwise to create a pocket, being careful not to cut all the way through. Season the outside with paprika, garlic powder, salt, and pepper.
  2. In a mixing bowl, combine roasted red peppers, spinach, cream cheese, Parmesan cheese, and minced garlic. Stir until well blended.
  3. Spoon the filling into the pocket of each chicken breast. Use toothpicks to seal the edges so the filling doesn’t spill out during cooking.
  4. Heat olive oil in a skillet over medium-high heat. Place the stuffed chicken breasts in the skillet and cook for 3-4 minutes on each side until golden brown.
  5. Transfer the skillet (or use a baking dish) to a preheated oven at 375°F (190°C). Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Let the chicken rest for 5 minutes before serving. Remove the toothpicks, garnish with parsley, and enjoy!
