  • 1 standard 3-ounce (85g) packet dried ramen noodles (discard seasoning packet or save for another use)
  • 2 large eggs, room temperature
  • 2 cloves garlic, minced
  • 2 stalks green onions, sliced thin
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon sriracha sauce (adjust to taste)
  • 1 tablespoon vegetable oil (canola or sunflower)
  • 1 teaspoon sesame oil
  • ½ cup optional veggies (shredded carrots, bell peppers, or snap peas)
  • 1 teaspoon toasted sesame seeds (for garnish)

Instructions

  1. Bring a medium pot of water to a boil. Add ramen noodles and cook for 2 minutes until just tender but still firm (al dente). Drain and rinse under cold water to stop cooking. Set aside.
  2. While noodles cook, mince garlic, slice green onions, and chop any optional veggies. Crack eggs into a small bowl and whisk lightly with a pinch of salt.
  3. Heat a 10-12 inch non-stick skillet or wok over medium-high heat. Add vegetable oil and swirl to coat. Once shimmering, add garlic and sauté for 30 seconds until fragrant but not browned.
  4. Add optional veggies and stir-fry for 2 minutes until just tender but still bright and crunchy.
  5. Add drained noodles to the pan. Pour in soy sauce, sriracha, and sesame oil. Toss well to combine, ensuring all noodles are coated evenly. Cook for 3-4 minutes.
  6. Push noodles to one side of the pan. Pour whisked eggs into the empty space. Let sit undisturbed for about 30 seconds until edges start to set. Gently scramble or fold egg into noodles until cooked but still moist and silky (about 2 minutes).
  7. Stir in green onions and remove from heat. Sprinkle toasted sesame seeds on top.

Notes

Do not overcook noodles; rinse after boiling to stop cooking and separate strands. Cook egg gently to keep it silky and creamy. Adjust sriracha to taste. Use silicone spatula to fold egg without breaking noodles. For gluten-free, use tamari and gluten-free noodles. Add protein like chicken or tofu as desired.
