A quick and easy summer dessert featuring juicy pineapple slices grilled with a caramelized cinnamon sugar coating, perfect for outdoor gatherings.

  • 1 medium fresh pineapple, peeled, cored, and cut into 1/2-inch thick rings or wedges
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter or coconut oil, melted
  • Optional toppings: fresh mint leaves, vanilla ice cream or Greek yogurt, honey drizzle

Instructions

  1. Peel and core the pineapple. Cut into 1/2-inch thick rings or wedges.
  2. In a mixing bowl, combine 1/4 cup granulated sugar and 1 teaspoon ground cinnamon.
  3. Melt 2 tablespoons of butter or coconut oil. Using a brush, coat each pineapple slice on both sides.
  4. Sprinkle the cinnamon sugar mix evenly over both sides of the pineapple slices.
  5. Preheat the grill to medium-high heat (375–400°F).
  6. Place pineapple slices on the grill grates and grill for 3–4 minutes per side, flipping carefully with tongs until caramelized and grill marks appear.
  7. Remove from grill and let cool for 1-2 minutes. Serve warm with optional toppings like fresh mint or vanilla ice cream.

Notes

Use firm but ripe pineapple for best grilling texture. Brush pineapple with butter or coconut oil to prevent sticking and help caramelize sugar. Watch sugar closely to avoid burning. If no grill is available, use a grill pan, broiler, or cast-iron skillet on the stove.
