  • 1 medium fresh pineapple, peeled, cored, and cut into rings or spears
  • 1/4 cup honey (60 ml)
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon freshly squeezed lime juice
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Prepare the pineapple by peeling, coring, and slicing into about 1/2-inch thick rings or spears.
  2. In a small mixing bowl, whisk together honey, melted butter, ground cinnamon, lime juice, vanilla extract (if using), and salt until smooth.
  3. Preheat the grill to medium-high heat, about 375-400°F (190-204°C).
  4. Place pineapple slices directly on the grill grates and grill for 3-4 minutes on the first side until grill marks appear and pineapple starts to caramelize. Flip carefully using tongs.
  5. Brush the grilled side of the pineapple with the cinnamon honey glaze, flip again, and glaze the other side. Grill for another 3-4 minutes, brushing more glaze as you go, until pineapple is tender but holds shape.
  6. Remove pineapple from grill and let rest for a few minutes to allow the glaze to thicken and flavors to meld.

Notes

If fresh pineapple is unavailable, canned pineapple rings packed in juice (not syrup) can be used but fresh is preferred. For a vegan version, substitute butter with coconut oil and honey with agave syrup or maple syrup. To prevent sticking, oil grill grates before cooking. Watch heat carefully to avoid burning the glaze. The glaze can be prepared a day ahead and stored in the fridge.
