Instructions

  1. Rinse and pat dry 4 ripe peaches. Slice each peach in half and carefully remove the pit, keeping halves intact.
  2. Preheat grill to medium-high heat, about 375°F (190°C). If using a grill pan, heat over medium-high on stove.
  3. Lightly brush each peach half with 1 tablespoon olive oil to prevent sticking and add richness.
  4. Place peach halves cut side down on the grill. Cook for 3-4 minutes until grill marks appear and peaches soften slightly but hold shape.
  5. Flip peaches carefully and grill skin side for another 2-3 minutes until tender but not mushy.
  6. While peaches grill, combine 3 tablespoons honey, 1 tablespoon finely chopped fresh thyme, and 1 teaspoon fresh lemon juice in a small bowl. Stir gently.
  7. Remove peaches from grill and transfer to serving plate. Drizzle honey-thyme mixture generously over warm peaches.
  8. Add optional toppings like crumbled goat cheese or vanilla ice cream if desired.
  9. Serve immediately while warm.
