This grilled corn recipe features fresh corn grilled with husks on for moisture, finished with a smoky char and brushed with a spicy herb butter for a bold, nostalgic flavor perfect for any occasion.

  • 4 ears fresh corn on the cob, husked but with some silk left
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped fresh parsley
  • 1 clove garlic, minced
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Juice of half a lime
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Optional: grated cotija cheese or parmesan for sprinkling after grilling

Instructions

  1. Peel back the husks of each corn ear without removing them entirely to remove the silk, then fold the husks back over the corn.
  2. In a medium bowl, combine softened butter, minced garlic, chopped cilantro and parsley, smoked paprika, cayenne pepper, lime juice, salt, and black pepper. Mix until smooth.
  3. Preheat grill to medium-high heat (about 375–400°F). Brush grill grates lightly with olive oil.
  4. Place prepared corn on the grill with husks on, turning every 3-4 minutes. Grill for about 15 minutes until husks char and blacken.
  5. Carefully peel back husks completely and place corn directly on grill grates. Turn every 1-2 minutes until char marks appear, about 5-7 minutes.
  6. Remove corn from grill and immediately brush generously with spicy herb butter to melt into the corn.
  7. Serve sprinkled with extra fresh herbs and optional cotija or parmesan cheese, with a final squeeze of lime.

Notes

If butter firms up while prepping, warm gently in microwave for 10 seconds to soften. Watch for flare-ups on grill and move corn as needed to avoid burning. Can substitute plant-based butter and vegan cheese for dairy-free version. Frozen corn kernels can be used but grilling fresh corn is preferred for best smoky flavor.
