  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • Juice of 1 lime
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup sour cream
  • ½ cup guacamole
  • Chopped fresh cilantro (optional)
  • 810 small flour or corn tortillas

Instructions

  1. Mix smoked paprika, garlic powder, cumin, chili powder, salt, and pepper in a small bowl. Rub the spice mix evenly over the chicken thighs or breasts. Drizzle with olive oil and lime juice, then let marinate for 10-15 minutes.
  2. Chop lettuce, tomatoes, and cilantro. Shred cheese and set up toppings in small bowls.
  3. Heat a large skillet over medium-high heat. Add marinated chicken and cook for 4-5 minutes per side, or until fully cooked and golden brown. Use a meat thermometer to check for an internal temperature of 165°F.
  4. Remove chicken from the pan and let rest for 5 minutes before slicing into thin strips.
  5. Warm tortillas in a dry skillet or microwave for about 10 seconds each.
  6. Assemble tacos by placing chicken strips on each tortilla. Add shredded lettuce, diced tomatoes, cheese, sour cream, guacamole, and cilantro if desired.
