These smash burgers feature a crispy-edged, juicy beef patty cooked on a Blackstone griddle, topped with a tangy creamy secret sauce. Perfect for quick weeknight dinners or backyard cookouts.

  • 1 lb ground beef, 80/20 blend (freshly ground chuck recommended)
  • Salt and freshly ground black pepper, to taste
  • 4 slices sharp cheddar cheese
  • 4 soft burger buns, toasted (brioche buns recommended)
  • Butter, for toasting buns
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp pickle juice or finely chopped dill pickles
  • Salt and pepper, to taste
  • Optional toppings: crispy bacon strips, sliced red onions, leafy lettuce, tomato slices, pickles

Instructions

  1. Preheat your Blackstone griddle or skillet to medium-high heat (around 400°F). Let it heat for about 5 minutes.
  2. In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, garlic powder, smoked paprika, and pickle juice. Season with salt and pepper. Chill in the fridge while cooking.
  3. Divide the ground beef into 4 equal portions and gently roll into loose balls without overworking the meat.
  4. Spread butter lightly on the cut sides of the buns and toast them butter-side down on the griddle until golden brown, about 1-2 minutes. Remove and set aside.
  5. Place each beef ball on the hot griddle. Using a spatula or burger press, press down firmly to about ¼ inch thickness. Hold pressure for 10-15 seconds to create a crispy edge.
  6. Immediately season the patties with salt and pepper.
  7. Cook the patties for 2-3 minutes without moving until edges are crisp and juices bubble on top.
  8. Flip the burgers carefully using a spatula. Add a slice of cheese on each patty right away.
  9. Cook for another 1-2 minutes until cheese melts and patties reach desired doneness (140°F for medium).
  10. Spread a generous amount of secret sauce on both toasted bun halves. Add the patty and your choice of toppings.
  11. Serve immediately while hot and fresh off the griddle.

Notes

Do not overwork the beef to keep patties tender. Press firmly but briefly to create a crispy crust. Use high heat for best sear. Toast buns last to keep them warm and crisp. Scrape under patties when flipping to lift crispy bits. Lightly oil griddle if not non-stick.
