  • 8 slices thick-cut bacon
  • 4 slices sharp cheddar cheese
  • 4 large eggs
  • 2 tablespoons unsalted butter, softened
  • Salt and pepper to taste
  • Optional: sliced avocado, tomato slices, Dijon mustard

Instructions

  1. Cook the bacon in a skillet over medium heat for 4-5 minutes per side until crispy. Drain on paper towels.
  2. Remove excess bacon fat from the skillet, leaving about 1 teaspoon. Cook eggs to preference (fried or scrambled) seasoning with salt and pepper.
  3. Slice croissants horizontally to create sandwich pockets. Spread 1/2 tablespoon softened butter on each cut side.
  4. Toast buttered croissant halves on a baking sheet in a preheated oven at 375°F (190°C) for 5-7 minutes until golden and flaky.
  5. Assemble sandwiches by layering each croissant bottom with a slice of cheddar, two slices of bacon, and one cooked egg. Add optional extras if desired. Top with croissant lid.
  6. Optional: Warm assembled sandwiches in the oven at 375°F (190°C) for 2-3 minutes to melt cheese.
  7. Serve immediately while warm.
