  • 1 lb boneless, skinless chicken breasts
  • 1 large lemon, zested and juiced
  • 2 tbsp fresh herbs (parsley, thyme, oregano), chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil (extra virgin recommended)
  • Salt and freshly ground black pepper, to taste
  • Optional veggies: sliced bell peppers, zucchini, cherry tomatoes

Instructions

  1. In a mixing bowl, combine lemon zest, lemon juice, minced garlic, chopped herbs, olive oil, salt, and pepper.
  2. Add chicken breasts and toss well to coat. Marinate for 10-30 minutes.
  3. Tear off four large sheets of heavy-duty aluminum foil (about 12×12 inches each). Place one chicken breast in the center of each sheet.
  4. Add optional sliced veggies around the chicken. Pour leftover marinade over chicken and veggies.
  5. Fold foil over chicken and veggies, crimp edges tightly to seal, leaving space inside for steam.
  6. Cook foil packs on hot coals, camp stove grates, or grill for 20-25 minutes, flipping halfway through.
  7. Check doneness by carefully opening a pack and cutting into the chicken; juices should run clear.
  8. Let packs rest sealed for 5 minutes off heat. Open carefully and serve.

Notes

Do not over-marinate to avoid mushy texture; use heavy-duty foil or double layer regular foil to prevent tearing. Cook over steady medium heat and flip packs halfway through. Let chicken rest after cooking to keep it juicy. For extra char, open foil for last 3-5 minutes but watch to avoid drying out. Rosemary sprig inside foil adds smoky aroma.
