  • 8 oz full-fat cream cheese, softened to room temperature
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons fresh chives, finely chopped
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Thinly sliced smoked salmon
  • Capers (optional, 1-2 per bite)

Instructions

  1. Rinse the cucumbers thoroughly and slice into 1/4-inch (about 6 mm) thick rounds. Pat dry with a paper towel to remove excess moisture.
  2. In a mixing bowl, combine softened cream cheese with chopped dill and chives. Add lemon juice, garlic powder, salt, and pepper. Stir until smooth and well combined. Add a teaspoon of water or milk if mixture is too thick.
  3. Cut the smoked salmon into bite-sized pieces roughly the same size as the cucumber rounds.
  4. Spread or pipe about 1 tablespoon of the herb cheese onto each cucumber slice. Top with a piece of smoked salmon. Add capers if using.
  5. Optional: Refrigerate the assembled bites for about 10 minutes before serving to let flavors meld and keep cucumber crisp.

Notes

Use English cucumbers for less watery bites. Soften cream cheese to room temperature for easier blending. Prepare herb cheese up to a day ahead and refrigerate. Assemble just before serving for best texture. For a fancier presentation, pipe the cheese with a star tip and garnish with dill or lemon zest. Can substitute smoked salmon with smoked trout or turkey breast. Dairy-free cream cheese can be used for vegan adaptation.
