  • Juice of 1 lime (about 2 tablespoons)
  • Salt to taste
  • Warm flour or corn tortillas, lime wedges, and optional toppings like sour cream or avocado slices

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large mixing bowl, combine shrimp, sliced bell peppers, and onions. Drizzle with olive oil and sprinkle fajita seasoning (chili powder, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, salt, and black pepper). Toss to coat evenly.
  3. Spread shrimp and veggies in a single layer on a rimmed baking sheet, avoiding overcrowding.
  4. Roast in the oven for 10-12 minutes, flipping shrimp and stirring veggies halfway through, until shrimp are pink and opaque and veggies have a slight char.
  5. While shrimp roast, prepare mango pico de gallo by combining diced mango, chopped tomato, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Toss gently and let sit for 5 minutes.
  6. Warm tortillas by wrapping in foil and placing in the oven during the last 5 minutes of roasting or heating in a dry skillet for about 30 seconds per side.
  7. Assemble fajitas by spooning shrimp and veggies onto warm tortillas and topping with mango pico de gallo and any additional toppings like avocado or sour cream.
  8. Serve immediately with extra lime wedges if desired.
