  • 2 cups (480 ml) whole milk (or substitute almond milk for a dairy-free option)
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • ½ cup (65 g) all-purpose flour
  • ½ cup (100 g) light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons (85 g) unsalted butter, cold and cut into small cubes

Instructions

  1. Cut day-old brioche or challah into roughly 1-inch cubes and spread evenly in a 9×13 inch baking dish.
  2. In a large bowl, whisk together 8 large eggs, 2 cups whole milk, ½ cup granulated sugar, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, and a pinch of salt until smooth.
  3. Slowly pour the custard mixture evenly over the bread cubes. Gently press down with a spatula to help the bread soak up the liquid. Let it sit for 10 minutes or cover and refrigerate overnight.
  4. In a separate bowl, combine ½ cup all-purpose flour, ½ cup packed light brown sugar, 1 teaspoon ground cinnamon, and ¼ teaspoon salt. Add 6 tablespoons cold unsalted butter cubes and work into the dry ingredients with a pastry cutter or fingers until mixture resembles coarse crumbs.
  5. Sprinkle the streusel evenly over the soaked bread.
  6. Preheat oven to 350°F (175°C). Bake uncovered for 45-50 minutes until the top is golden brown and a knife inserted in the center comes out clean. Tent with foil if streusel browns too fast.
  7. Let the casserole cool for 5-10 minutes before serving.

Notes

Use day-old or slightly stale bread for best texture. Keep butter cold when making streusel for crumbly topping. Cover casserole overnight to prevent drying out. Watch bake time and tent with foil if streusel browns too fast. Soak bread overnight for best flavor and texture but at least 30 minutes if short on time.
