  • ¾ cup (150g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, melted and cooled
  • ½ cup (120ml) buttermilk
  • 2 large eggs, room temperature
  • Zest of 2 medium lemons (about 2 tablespoons)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons poppy seeds
  • 1 teaspoon vanilla extract
  • Optional glaze: powdered sugar mixed with a little lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prep your mini muffin tin by lightly greasing or lining with mini paper cups.
  2. In a large bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and poppy seeds.
  3. In a separate bowl, whisk granulated sugar with eggs until pale and slightly thickened, about 2-3 minutes.
  4. Add melted, cooled unsalted butter, buttermilk, lemon zest, lemon juice, and vanilla extract to the wet ingredients and whisk until combined.
  5. Pour wet mixture into dry ingredients and fold gently with a spatula until just combined; avoid overmixing.
  6. Fill each mini muffin cup about 3/4 full with batter using a small spoon or cookie scoop.
  7. Bake for 12-15 minutes or until tops are lightly golden and a toothpick inserted comes out clean.
  8. Remove from oven and let muffins rest in the tin for 5 minutes before transferring to a cooling rack.
  9. Once completely cooled, optionally drizzle with lemon glaze made from powdered sugar and lemon juice.
