A quick and easy breakfast casserole featuring buttery croissants, savory ham, and melty sharp cheddar cheese, perfect for busy mornings or brunch guests.

Ingredients

Scale
  • 6 large butter croissants, day-old or slightly stale, torn into bite-sized pieces
  • 2 cups diced cooked ham (smoked or leftover holiday ham preferred)
  • 2 cups shredded sharp cheddar cheese
  • 6 large eggs, room temperature
  • 2 cups whole milk (can substitute 2% or unsweetened almond milk)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder (optional)
  • 2 tablespoons fresh parsley, chopped (optional for garnish)
  • Parmesan cheese for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Tear croissants into bite-sized pieces and spread evenly in the prepared baking dish.
  3. Scatter diced ham evenly over the croissants.
  4. Sprinkle shredded cheddar cheese over the ham and croissants, reserving about ¼ cup for topping.
  5. In a large mixing bowl, whisk together eggs, milk, Dijon mustard, salt, pepper, and garlic powder until smooth and slightly frothy.
  6. Pour the custard mixture evenly over the croissants, ham, and cheese. Gently shake the dish side to side to help custard soak through.
  7. Let the casserole sit at room temperature for 10 minutes to allow croissants to absorb the custard.
  8. Sprinkle the reserved cheese on top.
  9. Bake uncovered for 35-40 minutes, or until the top is puffed, golden brown, and a knife inserted near the center comes out clean.
  10. Remove from oven and let rest for 5 minutes before slicing and serving.

Notes

Use day-old croissants for best texture to absorb custard without becoming mushy. Let the casserole sit 10 minutes before baking to soak. If top browns too quickly, tent with foil. Broil last 2 minutes for crispier edges if desired. Can assemble night before and refrigerate; add 10 extra minutes to baking time. For dairy-free, substitute dairy-free cheese and coconut or almond milk.
