A quick and easy strawberry glaze made from fresh strawberries, sugar, lemon juice, and cornstarch, perfect for glazing flaky pastries with a sweet, glossy finish.

  • 1 cup fresh strawberries, hulled and chopped (about 150 grams / 5.3 oz)
  • ½ cup granulated sugar (100 grams / 3.5 oz)
  • 1 tablespoon freshly squeezed lemon juice
  • ¼ cup water (60 ml / 2 fl oz)
  • 1 tablespoon cornstarch dissolved in 2 tablespoons cold water
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Hull and chop about 1 cup (150 grams) of fresh strawberries into small pieces. (5 minutes)
  2. In a medium saucepan, mix together ½ cup (100 grams) granulated sugar, ¼ cup (60 ml) water, and the chopped strawberries. Stir gently to combine. (2 minutes)
  3. Place the pan over medium heat and bring to a gentle simmer. Let the strawberries soften and the sugar dissolve, stirring occasionally until the mixture bubbles lightly and the strawberries break down into a jammy texture. (7–8 minutes)
  4. Stir in 1 tablespoon fresh lemon juice and ½ teaspoon vanilla extract, if using. (1 minute)
  5. In a small bowl, dissolve 1 tablespoon cornstarch in 2 tablespoons cold water until smooth. Slowly pour this slurry into the simmering strawberry mixture while stirring continuously. (2 minutes)
  6. Continue cooking the glaze for another 2–3 minutes, stirring constantly, until it thickens to a shiny, pourable consistency. If it gets too thick, add a splash of water and stir. (3 minutes)
  7. Remove from heat and let the glaze cool for 5 minutes before using. It will thicken more as it cools, perfect for drizzling or brushing onto pastries. (5 minutes)

Notes

Use ripe strawberries for best flavor. Stir constantly after adding cornstarch to avoid lumps. Adjust thickness by adding water if too thick or simmering longer if too thin. For ultra-smooth glaze, strain through a fine mesh sieve before cooling. Can use frozen strawberries if thawed and drained. Store in airtight container refrigerated up to one week. Reheat gently with splash of water before use.
