  • 1/2 cup (100 g) granulated sugar
  • 2 large eggs, room temperature
  • 1/4 cup (30 g) all-purpose flour
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • Optional: 1/2 tsp espresso powder
  • Optional: powdered sugar for dusting
  • Optional: fresh berries or ice cream for serving

Instructions

  1. Preheat the oven to 425°F (220°C). Place a baking sheet on the middle rack.
  2. Butter the insides of two 6 oz (180 ml) ramekins generously and dust with cocoa powder, tapping out the excess.
  3. Melt the chocolate and butter together in a microwave-safe bowl in 20-second bursts, stirring until smooth, or use a double boiler.
  4. In a separate bowl, whisk the eggs, sugar, and vanilla extract vigorously until pale and slightly thickened (2-3 minutes by hand).
  5. Slowly pour the melted chocolate and butter into the egg mixture, whisking constantly. Add a pinch of salt and espresso powder if using.
  6. Sift the flour over the batter and fold gently with a spatula until just combined.
  7. Divide the batter evenly between the prepared ramekins, filling about three-quarters full.
  8. Bake on the preheated baking sheet for 12-14 minutes until edges are set but centers are soft and slightly jiggly.
  9. Let the cakes rest for 1-2 minutes, then run a knife around the edges and invert onto plates.
  10. Dust with powdered sugar if desired and serve immediately with fresh berries or ice cream.

Use room temperature eggs for better batter texture. Do not overmix after adding flour to keep cakes tender. Dust ramekins with cocoa powder to prevent sticking.
