  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract

  • 1/4 cup (30g) unsweetened Dutch-processed cocoa powder
  • 1/4 teaspoon salt
  • 68 whole Cadbury Mini Eggs, unwrapped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch pan or line it with parchment paper, leaving an overhang for easy removal.
  2. Melt the butter in a microwave-safe bowl or over a double boiler until smooth and glossy. Let it cool slightly (about 5 minutes).
  3. Whisk together the sugar and eggs in a large bowl. Beat vigorously for about 2 minutes until thick and pale.
  4. Add the vanilla extract and melted butter to the egg mixture, stirring gently to combine. Avoid overmixing.
  5. Sift together the flour, cocoa powder, and salt in a separate bowl.
  6. Fold the dry ingredients into the wet mixture gently with a spatula until just combined. Batter should be thick and glossy.
  7. Pour half the batter evenly into the prepared pan and smooth the surface.
  8. Unwrap the Cadbury eggs and gently press them evenly into the batter.
  9. Top with the remaining batter, spreading carefully to cover the eggs completely.
  10. Bake for 25-30 minutes. Check at 25 minutes by inserting a toothpick near the edge; it should come out with a few moist crumbs but no raw batter.
  11. Let the brownies cool in the pan on a wire rack for at least 30 minutes before slicing to allow molten centers to set slightly.
