Ingredients

  • 2 pounds chuck roast or stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved or quartered
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, freshly minced
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon fresh thyme (optional)
  • 2 tablespoons parsley, chopped (optional)

Instructions

  1. Trim any excess fat from the chuck roast and cut it into bite-sized pieces. Season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the beef bites in batches until browned on all sides (about 2 minutes per side). Transfer to the Crockpot.
  3. Arrange the halved baby potatoes around the beef in the Crockpot.
  4. In a mixing bowl, combine melted butter, minced garlic, beef broth, and thyme. Pour the mixture over the beef and potatoes.
  5. Cover the Crockpot and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender and the potatoes are cooked through.
  6. Sprinkle chopped parsley over the dish before serving. Serve warm and enjoy!
