  • 8 ounces sliced turkey breast (deli-sliced or leftover roasted turkey)
  • 8 slices thick-cut bacon
  • 1 large ripe but firm avocado, sliced thinly
  • Garlic Aioli:
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced finely
  • 1 tsp fresh lemon juice
  • Salt and pepper to taste
  • Optional:
  • A handful of baby spinach or arugula
  • 4 medium ripe tomato slices
  • 1 tbsp butter (for toasting croissants)

Instructions

  1. Prepare the Garlic Aioli: In a small bowl, combine 1/4 cup mayonnaise, minced garlic, lemon juice, salt, and pepper. Whisk until smooth and set aside.
  2. Cook the Bacon: Heat a skillet over medium heat. Lay bacon strips flat without overlapping. Cook 4-5 minutes per side until crispy. Transfer to paper towel-lined plate to drain. Keep rendered bacon fat in pan.
  3. Toast the Croissants: Lower heat to medium-low. Butter croissant halves lightly and place cut side down in skillet with bacon fat. Toast until golden and crisp, about 3-4 minutes. Flip and toast other side if desired.
  4. Slice Avocado and Tomatoes: Peel and slice avocado thinly. Slice tomatoes if using. Toss avocado slices gently with a little lemon juice to prevent browning.
  5. Assemble the Sandwich: Spread garlic aioli generously on both croissant halves. Layer turkey slices evenly, then add bacon, avocado, tomato slices (if using), and leafy greens. Close sandwich and press gently.
  6. Optional Final Touch: For extra crunch, press assembled sandwich in skillet for 30 seconds per side, wrapped in foil or using a sandwich press.

Notes

Use rendered bacon fat to toast croissants for extra flavor. For a lighter aioli, swap half the mayo for Greek yogurt. To keep avocado from browning, toss slices with lemon juice. Assemble just before eating to avoid soggy croissants. For gluten-free, use gluten-free croissants or lettuce wraps. Reheat leftovers in toaster oven or skillet, avoid microwave.
