Instructions

  1. Prepare the strawberry puree by rinsing and hulling fresh strawberries, then puree in a blender or food processor until smooth. Set aside.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar.
  3. In a separate bowl, whisk the eggs until light and frothy. Add the strawberry puree, whole milk, melted butter, and vanilla extract. Whisk until well combined.
  4. Slowly add the wet mixture to the dry ingredients, folding gently with a spatula. Do not overmix; some lumps are okay. The batter should be thick but spoonable. Add a splash more milk if too stiff.
