These crispy spicy tuna rice bites combine perfectly seasoned tuna with golden-brown crispy rice squares for a flavor explosion. They are quick, easy, and perfect for parties or cozy nights in.

  • 1 cup sushi rice, cooked and cooled
  • 2 tablespoons rice vinegar
  • 2 tablespoons avocado oil
  • 6 ounces sushi-grade tuna, finely chopped
  • 2 tablespoons mayonnaise (preferably Kewpie)
  • 1 tablespoon Sriracha
  • 1 teaspoon soy sauce
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • Nori sheets, crumbled (optional)

Instructions

  1. Cook the sushi rice according to package instructions. Stir in rice vinegar and let it cool completely.
  2. Spread the cooled rice onto a parchment-lined tray or baking sheet. Press it down evenly to about 1/2 inch thickness. Chill in the fridge for at least 30 minutes.
  3. Prepare the spicy tuna mixture by combining finely chopped tuna, mayonnaise, Sriracha, soy sauce, and a pinch of salt in a bowl. Mix until creamy and refrigerate.
  4. Heat avocado oil in a non-stick skillet over medium heat. Cut the chilled rice into small squares or rectangles.
  5. Fry the rice squares in the skillet until golden brown and crispy on both sides, about 2-3 minutes per side. Work in batches if necessary.
  6. Place the crispy rice squares on a paper towel-lined plate to drain excess oil.
  7. Top each rice square with a dollop of the spicy tuna mixture. Garnish with green onions, sesame seeds, and crumbled nori, if desired.
  8. Serve immediately and enjoy!

Notes

Chill the rice before frying to ensure it holds together. Adjust the spice level by adding more or less Sriracha. Prep the rice and tuna mixture ahead of time but assemble right before serving for maximum crispness.
